A quick and green lunch

I love avocados.  They’re so creamy, satisfying, and unique tasting that I just can’t get enough of them.  Usually I have my avocados in guacamole, but today I had a great lunch that I want to share with you that’s super simple to make, is (somewhat) healthy, and is delicious.  Here it is:

It’s that simple: a fresh, super ripe avocado spread over two pieces of toast, with a light helping of salt and peper to enhance the flavor.  The key obviously is having a perfect avocado, ripe enough to be spreadable and flavorful but not so ripe that it’s mushy or unappealing–it’s the only taste that matters here.  I think it would be tough to find as simple a lunch that is equally fantastic, but if you know of one, please let me know.  Just make sure it has avocados in it.
